Heat slowly one (1) ounce of cooking oil with four (4) ounces chopped onions, two (2) diced tomatoes, 1 tbsp. EXOTICA MADRAS CURRY POWDER, one (1) lb. meat or fish and salt to taste. Stir and allow to simmer gently until meat or fish is tender. Serves 4 persons
- 1½ Cups meat, fish or vegetables
- ½ Cup whipping cream
- 2 Garlic cloves, minced
- 2 tbl. Spoons finely chopped coconut
- ½ teaspoon turmeric
- 1 tbl. Spoon finely grated horse-radish
- Pinch of cayenne
- 1 tbl. Spoon fresh lemon juice
- Pinch of salt
- 2 dashes EXOTICA HOT PEPPER SAUCE
- 1 tbl. Spoon butter
- ¼ cup EXOTICA CURRY POWDER
Place meat, fish or vegetables in bowl. Add garlic, turmeric, Cayenne and salt and toss to mix well. Let stand for ½ hour. Melt butter in medium skillet over medium heat, add meat, fish or vegetables and cook briefly until tender.
Combine the cream in 2 – quart saucepan over medium heat and simmer for 4 minutes, stirring frequently. Remove from heat and mix in coconut, horseradish, lemon juice, hot pepper sauce and salt. Return to heat and cook gently until fully warmed. Serve with white rice and raisins.
