(A Traditional Barbadian dish!)

Cou Cou and Flying Fish

Ingredients

Cou Cou

  • 2 cups (1 lb) EXOTICA CORN MEAL
  • 1 tbl. Spoon salt to taste
  • 12 okras
  • 2 tbl.  Spoons butter
  • 6 cups of water or more

Steamed Fish

  • 1 Lb of fish
  • 1 ½ ozs EXOTICA SEASONING
  • 2 Tbl. spoons Margarine
  • 1 Garlic clove crushed
  • 1 Large tomato sliced
  • 1 Bay leaf
  • 1 Medium onion, sliced
  • ½ cups of water

Method

Wash okras, remove stems, slice into small rings and boil with half the water and salt for about twelve (12) minutes. Add the remainder of the water and salt to the sifted EXOTICA CORN MEAL and mix well.
Remove saucepan from heat and stir in the EXOTICA CORN MEAL until well blended. Return saucepan to stove and cool mixture, stirring ingredients with a wooden spatula over medium heat.
When mixture becomes smooth and breaks away from the bottom of the saucepan, it is finished.  Place into a dish immediately and spread liberally with butter. Serve with steamed flying fish.

Steamed Fish

Marinate fish in lime and salt for approximately 10 minutes. Wash off and dab dry. Season/rub fish with EXOTICA HERBAL SEASONING. Place fish, tomato, onion and margarine in a steamer or saucepan along with the water, garlic and bay leaf. Cover and simmer for approximately 15 minutes. Herbs can be added as desired. Add salt and pepper to taste. Serve with vegetables or rice. (Makes 4 servings)
