Bajan Sugar Cakes

Ingredients

  • 2 Cups granulated sugar
  • ½ teaspoon EXOTICA VANILLA ESSENCE
  • ½ Cup water
  • 1 cup grated coconut

Method

Boil sugar and water together for approximately 5 minutes until syrupy. Test a few drops in a saucer with cold water, when it forms a soft ball, remove from heat.  After cooling to medium heat, beat mixture until it begins to crystallize.  Stir in EXOTICA ESSENCE and coconut; blend well and pour into mould or drop mixture in a lightly greased shallow pan.  Mixture may be divided and coloured as necessary.  
A few drops of red food dye give pink sugar cakes.
